The big ones are not as quite as tasty as the small ones, but I like the fact that you can steak them and put them on a grill without a fish basket.

Now for the Buffalo Striper Dip recipe which I got from the captain of the Adam Bomb III in Cape May:

Bad weather = cooking bass!

After a couple batches of striper cakes, tried this...

My wife makes a mean buffalo chicken dip, so sitting here with my 9 month old we got to thinking...let's try it with striper!

Boiled about a pound or so of fish till flaky. Pull it, put it on a cutting board, and flake it up real good.

Mix up an 8oz package of cream cheese, 1/2 cup of Frank's hot sauce, 1/2 cup bleu cheese dressing in a bowl and mix in a couple handful's of a Mexican shredded cheese mix.

Pour in the fish and fold everything together.

Now, pour the entire mixture into a 8" x 8" baking dish, sprinkle some Mex shredded cheese on top, and pop it in a 350 degree oven for about 20 to 25 minutes. Use some Tostito's, and it is DAMNNNN GOOD!!!
