When I awoke this morning, I learned that NOAA had granted a short fishing window before the wind and rain arrived. Picked up some bait from Off The Hook and headed for the site of my Thanksgiving Day massacre in the lower bay. Lines in the water at 8:30. Caught 15 spiny dogfish and a couple of skates in 1 1/2 or 2 hours, so I decided to move up to the Villas. Anchored up in 18' of 49 degree water. After 25 minutes, the first fish spit the hook 1/2 way to the boat. The second broke the leader at the boat (a 40#+ fish). Probably a nick in the leader from the previously mentioned dogfish attack.

Fish #3 (38") and #4 (35") will not be swimming anymore . Decided it would not be prudent to try for a bonus fish and headed in around 12:30. Started raining while I was cleaning the fish at home. Can't wait to make some more Buffalo Striper Dip

Ditto on the dip, kurtzr.

I have cleaned and cooked 3 lb striper. I have caught 40 lbs striper but never kept. How are these big fish as table fare?

Thanks.

Bill

The big ones are not as quite as tasty as the small ones, but I like the fact that you can steak them and put them on a grill without a fish basket.

Now for the Buffalo Striper Dip recipe which I got from the captain of the Adam Bomb III in Cape May:

KITCHEN EXPERIMENT - Buffalo Striper Dip

Bad weather = cooking bass!

After a couple batches of striper cakes, tried this...

My wife makes a mean buffalo chicken dip, so sitting here with my 9 month old we got to thinking...let's try it with striper!

Boiled about a pound or so of fish till flaky. Pull it, put it on a cutting board, and flake it up real good.

Mix up an 8oz package of cream cheese, 1/2 cup of Frank's hot sauce, 1/2 cup bleu cheese dressing in a bowl and mix in a couple handful's of a Mexican shredded cheese mix.

Pour in the fish and fold everything together.

Now, pour the entire mixture into a 8" x 8" baking dish, sprinkle some Mex shredded cheese on top, and pop it in a 350 degree oven for about 20 to 25 minutes. Use some Tostito's, and it is DAMNNNN GOOD!!!

Bob, I took the liberty of copying your recipe to the Cook Book forum. It deserves its' prominent place there. Sounds mighty good! *Cheers*
