hoping to get a deer and wanna make some jerky out of it.............anybody got a favorite recipe? 012

Well, my recipe isn't exact measurements but the neighborhood has never complained.
cut the meat to jerky size (They will shrink) not too thick and not too thin. It might take a few times to figure how thick to cut the peices
In a seperate bowl mix,
soy sauce or terryaki sauce -around 1/4 cup
ground black and red pepper
garlic powder/ crushed garlic
onion powder
cayenne pepper (if you like it warm)
a drop or two of liquid smoke
I like to mix it separetely so I can taste the marinade and adjust it if it needs it
combine meat and marinade
the consistency I look for is kind of pastey/thick so it can stick to the meat. You can let it sit for a few hours or stick it in the dehydrator right away for around 4 hrs.

Don't let Harry bother you, we know you can shoot a deer. ::) (You do know wihch end of the rife to put the bullets in right? 006). We'll just keep our heads down, blast away. Oh by the way I love jerky. 008

Harry, been doing that for years, I have been letting my son get one, then I could wait for MR BIG HORNS..... ;D but this year I am hunting alone........... 001..so its back to deer 101 and get some meat in the freezer, then look for the big one................ 010 010 010

As above cut slightly frozen peices to desired size.( we like the backstrap the best. I cut mine about 1/4" thick. put peices in a bowl, Mix teriaki sauce, black pepper, and a small amount of brown sugar in a bowl, then pour over peices of meat. Mix up well, and cover with plastic wrap. Put in fridge over night. Occasionally pull out, and remix. next day stick into dehidrator. Mmmmmmm
Doesnt last long around my house.

sounds real good, now all I need is the deer, or at least some beef round steak Willie.......... thumbsup
No venison 006 Try using beef bottom round roast - lean and cheaper than top round, plus you can slice it along the grain, unlike a steak that's already cut cross grain. thumbsup
