Just took a drum fillet and cut it into fish stick sized pieces. Took wheat flour, garlic powder, onion powder, and hot paprika, and some small pieces of fresh green and red peppers. Mixed it all together and rolled the drum in it and made sure some fresh pepper pieces were on each piece......heated up some canola oil and cooked them until brown.......no pictures, but might tasty.....*thumbsup*

Wheat flour? That's an interesting twist. Always used wheat flour for pizza and bread dough. Might have to give that a spin on the next set of fillets. Thanks Willie! *Cheers*

I have a favorite recipe for a sauce I pour over pan fried reds..super easy to make
No msmts I'm afraid but roughly goes like this
-melt butter or margerine in saucean-1/2 to once stick depending how many red and how much sauce you want
add:
-few dashes worcestershire sauce
-hot sauce to taste
-chopped parsley, green onion and cilantro
-fresh lemon juice
sautee for a few minutes and pour over the fish.
is pretty good on striper as well!
