A little more Blue Crab 101:
Yes, females do "paint their nails," and their underbelly (apron) is distinctly different from the males. The mature females are commonly called "sooks" (rhymes with books) and sometimes the inmature females are referred to as "Sallies" or she-crabs. The apron of a mature sook is slightly different from the younger she-crabs.
Males don't display the pronounced fingernail polish on thier claw tips and have a distict apron that is "T" shapped. They are called Jimmies and are generally larger than the sooks.
Soft-shell crabs are inmature crabs that have just "molted" or shed their shells. A crab will molt several times over its lifespan, and particularly as it moves through the juvinile stages. They are called "pealers" by most crabbers and in most parts of the country will fetch a premium prices. Most of the pealers around here are "tank raised" because the soft stage only lasts a few hours. Crabbers can tell when crabs are about to molt and they will put these in a special holding tank. They have to be monitored carefully. Once the crab sheds its shell, he/she is quickly removed from the tank and put into a refridgerator. This preserves the soft shell.
One more thing: If you're gonna eat crabs, make sure they are alive when you put them in the steamer. Never eat dead crabs.
(Didn't mean to steal the thread, Dave. Your picture just inspired me. Nice photo work).
