I just got me 2 dozn Cherry stone (bout as big as my palm) and a 10.5 lb bonita.
I really like clam chowder with cream sauce an taters,
Who got the best chowder recipie ?
Who can tell me the bestest way ta do the other dzn clams up anuther way (I dont wanna steam em) ?
Who got the best Grillin recipie for bonito?
Who got a killer recipie for the other 1/2 of that bonito?
Got 9 count shrimps / pounds, but they goin tempura style. got 2 red snappers too.

Clam Fritters

Serves/Yields: Yield: 1 dozen.
Prep. Time:
Cook Time:
Category: Clams
Difficulty: Easy

Ingredients
chopped clams
1 egg
2/3 cup all-purpose flour
3 tablespoons milk
1 teaspoon baking powder
1/3 cup chopped onion
¼ teaspoon salt Vegetable oil
1/8 teaspoon pepper
Cocktail or tartar sauce

Directions
Drain clams, reserving 2 tablespoons juice. Set aside.

Combine flour, baking powder, salt, and pepper in a medium mixing bowl; stir well. Make a well in center of mixture, and set aside.

Combine egg, milk, and reserved clam juice, mixing well. Stir into dry ingredients. Stir in clams and onion.

Carefully drop mixture by tablespoonfuls into hot oil (375 degrees F.). Fry until golden brown, turning once. Drain on paper towels. Serve hot with cocktail or tartar sauce. *Cheers*

Southern Clam Chowder

Serves/Yields: Yield: 6 servings.

Ingredients
1 pint clams
1 cup grated cheddar cheese
1¼ cups clam liquor and milk
1 teaspoon salt
¼ cup butter or other fat
Dash pepper
1 cup cooked elbow macaroni
3 eggs, beaten
1 cup soft bread crumbs


Directions
Drain clams and save liquor. Add milk to liquor to equal 1 1/4 cups. Chop clams. Scald liquor; add butter, macaroni, crumbs, cheese, seasonings, and clams; mix well. Blend in egg. Place in a well-greased
1-quart casserole. Bake in a 350 degree oven about 45 minutes or until firm.

Southern-Style Snapper

Serves/Yields:

Difficulty: Easy

Ingredients
Butter flavor cooking spray
1 (14½ ounce) can tomato wedges, drained
1 cup thinly sliced okra
1 small onion, cut into thin rings
1½ teaspoons dried whole thyme
1½ teaspoons garlic powder with parsley
1 green pepper, cut into strips
1 pound red snapper fillets
2 tablespoons lemon juice

Directions
Coat a large skillet with cooking spray. Place over medium heat until hot. Layer with okra, onion, pepper, and tomato wedges in skillet. Mix thyme and garlic powder; sprinkle half of the mixture over the vegetables. Place fillets on top and sprinkle with lemon juice and remaining seasoning mixture. Bring to a boil. Cover, reduce heat, and simmer 10 to 15 minutes or until fish flakes easily with a fork.

Charred Spiced Bonito Tacos



For some reason, small tunas like the bonito are not as popular fresh as the large yellowfin and bigeye tunas.



Ingredients:

1 pound bonito fillet, cut into 2- by 4- by 1-inch strips
2 tablespoons freshly squeezed lime juice, plus more, if necessary
1/4 cup olive oil, plus more for oiling grill
2 tablespoons chipotle rub
2 tablespoons diced radish
2 tablespoons very thinly sliced scallion, white and green parts


charred tomato mint salsa
8 small tortillas, heated

PreparationLight the grill. In a medium-sized, nonreactive bowl, toss the fish with lime juice, 1/4 cup olive oil, and Chipotle Rub. Cover, refrigerate, and let marinate about 1 hour. Oil grill and cook fish over a hot fire until lightly charred and medium-rare (it should still be pink in the middle), about 3 minutes.

In a warm bowl (so fish does not cool too much), shred fish. Taste for seasoning and sprinkle with a little more Chipotle Rub and lime juice, if needed. Top with radish and scallion and serve warm with salsa and tortillas.

No pic of this supper,
Everything was goin good, till chowder was almost done, looked good.
taste was good, steamed em ta open um, all fine.
What did I ferget??? I forgot sumptin, first spoon (HAD TA get the biguns out for this!!!!) told the tale, flavor good,smell great, like sandpaper soup .
In my own way, well, lets just forget ta let um sit in a tub of water for a coupl hrs........
Kinda like 150 grit , an I ate the whole bowl too. Kid took 2 bites, spit one out an said the dogs cant have it. The dogs did it in, an I bet me an the dogs aint got no crud on our teeth. Polished SMOOTHE i tell ya!!!!!!!
