My step dad and I went out about 15 miles and had a feild day with the chicken dolpin on 6lbs test. We pulled up on a peace of tarp that looked to be the size of a trash can lid and got them started with some gotcha plugs and when they tired of that we switched to cut squid. As i was chumming them up with the squid i notice fish coming of the bottom so we free lined some cigs out and cought 2 keeper snapper. It lasted about a hour and a half then not much for the rest of the day. I would have like to have got into some larger ones but it wasn't in the cards for us.

not much meat on them p-nuts, but what meat they got is sweet. I've found myself with some smaller 'phins skinning them like a catfish, cutting a "V" down the lateral line, peel that bloodline out, gut, behead, rinse.
marinate in orange-tangerine juicy-juice and grill the whole thing in some foil with slices of lemon, lime, and orange.
garnish with a mango salsa (chopped mango, chopped sweet red pepper, cilantro) for a real treat!
So whats the ID on the other three fish up there with the two keeper snappers? three baby snappers? (JOKE!)

thats sound like a good recipe. the other fish are 2 vermillion and a mangrove. Never thought about skinning i will have to try that. as far as under size fish , i'm not stupid enough to try it. the man will bust your a$$ in this area. your a florida guy so you know what i mean.

I have never had much luck peeling the skin off of mahi. We get them up here on canyon trips under weeds/lobster pots and on the troll. I always end up skinning with a knife which is a pain in the azz. I'd like to see pics too!

I have seen his method and it works extremely well, comes off in one piece and doesn't waste any meat. Next time we get the opportunity, I will gladly shoot a digital camera video and post up on YouTube.

Yeah, we skin'em like that all the time. only way to go IMO. using pliers to pull it off is a breeze....

One other tip, not sure if it was mentioned in the above post.
The colder the fish the easier it is to skin. We found if they're not ice cold, the flesh will sometimes come off with the skin.

Excellent point Harry.....and a very important one. The colder the better (but not frozen).
