This will serve from 10 to 20 people, depending on how hungry and what else you got.
Ingredients:
1 dozen ears silver queen corn (best, but any will work)
1 or 2 Vidalia onions
~1 lb bacon
1 stick *REAL* butter, salted
12-16oz beer, and will work but i love using Sam Adams Cherry Wheat.
heavy duty aluminum foil
Pre-Prep:
shuck corn and remove all silk, cut ears in half, rinse
slice onions into rings
form pouches of foil that you can drop the corn halves in and seal
Prep:
take corn and wrap with slice of bacon and slide a few rings of onion over the bacon-wrapped corn
place in pouch, add a dab of butter (about 1/2 tsp) and a splash of beer. seal pouch (airtight - atleast four folds)
place on grill for about 20 minutes or so, turning avery few minutes to keep one side from burning.
The corn will roast / steam on the grill, the bacon adds flavor and helps keep it moist along with the beer and the onion should nearly carmelize.
you can downzize the recipe as needed.
