This recipe page is a good idea!

I use yellowfin tuna primarily, but you can use mahi, flounder, or any white fish.

The key is the chipolte sauce and cabbage - I dont know why but its great.

I cut the fish into cubes season with chili powder, red pepper and salt

Grill the cubes until just done ( I use a grill pan on the stove)

Finely shred cabbage.

You can use grated cheddar, chopped tomatoes etc if you like too.

Buy a can of Goya chipolte peppers in adobo sauce. Pull a pepper out of the can and put it in a blender/food processor with sour cream. Refrigerate the sauce after.

Using soft tortillas add some fish, and garnish with the cabbage, tomatoes etc and the chipolte sauce.

BTW my family likes these with Baha ranch dressing as well as the chipolte.
