I have not been happy with any crabs I have steamed the last 3 or so times. Meat stays stuck in shells (overcooked) and the crabs I had were not very meaty. Anybody BOIL them rather than steam?

One way I love em is cleaned (I always clean them) halved, and tossed into a homemade tomato gravy (sauce for you non italians or non Jersey boys). Make the gravy with tomato paste, puree, garlic, olive oil, fresh basil, a bay leaf and some chopped onion and salt. Toss the crabs in and simmer on low for for at least two hours. Serve over spaghetti or linguini with some bread and drink of choice.

Chinese friends cook them salt and pepper style in a wok like pan with oil and garlic. They are really good.

Cook them the way my Dad does it.... Boil water with 1/8 cup of apple vinger and a pinch of salt... sea salt if you have it.
The crabs taste great and the meat come out easy

Here is how i do it...I buy a big cheap porcalin steamer from Amazon..about $49...they usualy last me about a year but I use it about 20-30 times ...The high heat and salt finaly wear the bottom out...Here we go...Three Pabst Blue Ribbon Beers for Me and three for the Pot.. about a pint of apple cider viniger...about half a cup of Old Bay(if you do crabs a lot buy old bay on line in 7lb containers..about 1/8 the price of buy cans in stores...I use a lot..lol) next add about 1/4 cup of rock or sea salt(The salt is Important it causes the water to boil hotter which helps the steaming of the crabs) and finaly a 1/4 ounce of water...lol
Stir it up and get it boiling...Put steamer basket in and start layering live crabs(I use to poke each between the eyes with an ice pick..I was taught this keeps the claws on them when cooking...It takes too much time for 3-5 dozen crabs plus they dont like to comply with this and I dont see where it makes a whole lot of difference)..On top of each layer liberaly sprinkle more Old Bay...When You run out of crabs put the top on...Drink another PBR...put the paper...crackers and more PBR and lots of paper towels on the table...Now You have time to drink a couple more PBR's
About 20-30 minutes steaming for a bushell(5 dozen) a little less time for a couple dozen..The time also depends on your cooker a gas or electric stove takes a little longer...If you use an outside propane cooker time will be less(they get realy hot)
One Last thing(Danger...Danger)...DO NOT COOK OUT ALL THE LIQUID....I did this once thanks to My buddy PBR...ran into the kitchen pulled the top of and was engulfed with the worst cloud of hot burning pepper gas you can imagine...I could barely breath for 20 mins....ME=Dumbazzzzz...LOL
Anyways now comes the fun of smacking Your friends hand as they reach for that realy big one You were eyeing...Enjoy...BoogieBlues

The House I rent at St Georges Island during October and November has a really long dock on thr bay...I put out about 8 traps baited with Chicken necks and fish heads and guts from cleaning fish...I usualy get about 2-3 dozen every two days...It being late fall most are big fat heavy crabs...the ones in the pic are actually kinda small I picked them up in Panacea Fla on my way to the Island before I had a chance to set out traps...I have lots of friends that come visit while Iam there and have no problem keeping them full of Crabs...Grouper...snapper...redfish...flounder and shrimp. It is one of the most amazing fisheries I have ever seen between the gulf...bay and river you can catch it all...Oh yeah dont forget about the absoloute best OYSTERS in the world...This year I will have my 198dlv there for the first time So Iam like a kid waiting for Christmas...lol....BoogieBlues

There were a bunch of traps in Great Bay we were anchored up near some. Was watching as they were pulling them they looked like they were catching. On the way in saw several people crabbing from the bank and bridge.
