View Full Version : Rockfish Marsala... mmmmmmmm!!!!!!

I had some company over tonight for a Rockfish dinner. I thought I would try something a little different so I made Rockfish Marsala.I had done this once with Tau Tog but this was my first time with Rock. I served it on a bed of angel hair pasta and quiona with steamed vegetables. Everyone liked it. Here are my pictures of catching, cleaning and cooking;

Is that Couscous ?

I Think Couscous is the most under appreciated food around !

If ya like to cook or eat you should really try some ,you can fix it up almost any way you can think of add what ever you like !

Here is my attempt at a recipe for the Rockfish Marsala;

I took a Striped Bass fillet and cut it into 2-3 inch pieces then coated them in flour that I seasoned with salt, pepper some homemade fish rub a friend gave me.
I heated a couple of tablespoons of olive oil in a large skillet and cooked the chunks for about three minutes on each side.
I then added a half a cup of cooking wine and cooked for a minute on high.
Lastly I added a half cup of hot water and with 2 table spoons of butter and let it simmer for few minutes.
Then pour it all over the pasta and Quinoa.
I fed seven and everyone liked it!
